Cauliflower Humus

This recipe is a great way to get your veggies. I use this as a dip with celery and peppers. You can season to taste.

1 bag of Green Giant riced cauliflower (or just take a head of cauliflower and grate it with a cheese grater)
1 tsp olive oil (I like to use Tuscan flavored olive oil.)
1/4 tsp garlic powder (or to taste)
1/4 tsp onion powder (or to taste)
Salt to taste
2 TBSP no fat low sodium chicken broth
and fresh lime.

Take the olive oil, chicken broth, cauliflower and seasoning and put it on the stove and saute it for about 5 minutes.
Throw in a high power blender (I use a Vitamix) or food processor and pulverize until it’s the consistency of humus. If it is still chunky, add more lime and chicken broth, just a little at a time or you will have soup!

Serve chilled with veggies. Half of this is a full serving of veggies!!!! I use it to dip veggies, thin it out and use it as a sauce on meat (like gravy) or sometimes with just a spoon!

    • Sue, Janeva is creating a phase 4 cookbook just for people like you and I! I make a lot of dishes in her phase 1 cookbook even in maintenance… Dishes like the pizza casserole are a family favorite.
