You know you have been here!!! You eat a salad for EVERY SINGLE MEAL… And the thought of one more just sounds awful!!!
That’s when it’s time to get creative. I am having one of those days. I looked in my fridge, and just UGGGG!
Then I started looking at what I have in my fridge. Hmmmm, riced cauliflower… Staple… Angel Hair cabbage, purple cabbage, zucchini, broccoli, left over red pepper, left over grilled chicken, mung beans…
I start chucking leftovers into a pan, spritz with Pam… Boring… Found no sugar soy low sodium in the cupboard… Put some in the pan… Salty… Low sodium does not equate to no sodium… Also sort of bland. I have sugar free caramel syrup from Torini on the counter… I add a tablespoon of that to the mix…
Wow!!!! This is really good and I have enough veggies left over for another day!!! 2 cups of veggies down the hatch… One happy camper!
