Chocolate chai cookie

Yesterday I picked up some of the new vanilla chai latte drink mix from IP.  Wait until you smell this!  It reminds me of crisp fall evenings, cozy fires, cuddling, and relaxing.  Just the very scent of vanilla has me throwing my apron on!

In my house, there is chaos when a diet leaves anyone feeling deprived.  To combat this, we have baked goods.  I bake from the IP packets and have them ready to go.  Cookies are favorites.

So there I was, looking at my shiny new packet, knowing my Cookie Monster (hubby) was going to come a sniffing.  Did I drink the vanilla chai or bake with it.

I opened the pack… dang.. vanilla, cinnamon, spiced…. my scences went nuts.  I started getting creative and filled the house with a chocolate chai scent that brought everyone into the kitchen.  The result was a cake like cookie that will remind you of happy childhood memories.  100% phase 1.

1 chocolate Carmel mug cake
1 vanilla chai drink mix
1 tsp olive oil
1 tablespoon vanilla pre made
3 tablespoon liquid egg whites
1/2 teaspoon cinnamon
1/8 teaspoon ground ginger
1 tablespoon Walden farm pancake syrup
350 for 10-12 minutes in muffin top pan
Makes 2 servings of 2 cookies each serving
