Quick Stir Fry

My stomach (and when I say stomach, I’m trying to be as delicate as possible) has been bothering me for several days now, really since the end of last week.  I kind of have to wonder if it’s related to stopping the NoviLax/NoviRenal combo.   I’ve had a lot of cramping and pain.  It’s been no fun, so for the last couple of days, I had to take some more NoviLax.  I hope this is a short term problem, because I’d hate to have to rely on that.  I don’t seem to be able to get enough fiber to keep things moving otherwise.  Although I have been eating a lot of lettuce and vegetables, it didn’t seem to do the trick on it’s own.  OK, on to other topics….  Tonight I was in a big hurry to get some dinner and get out of the house to a neighborhood association meeting I had to attend at 6:30.  I needed something quick.  I usually think of dinner as meat/chicken/fish and vegetables, but I didn’t really have anything ready to go, so I made a quick veggie omelet.  Pretty tasty and very fast.  That got my my protein and vegetables in easily.  I just sautéed up some spinach, mushrooms and a couple of cherry tomatoes with some frozen peppers from Trader Joes – add some eggs and done!
