Today started off…. ummmmmm… sucktastically. Lots of frustration.. a few emotional outburst later… it’s time to change my day.
I took a little walk, and decided it would be a great time for a knock out breakfast!!! You know… start the day over, and better!
I made Wildberry Scones the other day. They are really light and airy… not dense… so they are not quiet scones but REALLY good! 1 package wild berry yogurt mix, 1 teaspoon baking powder, 1/2 teaspoon cinnamon blend till combined. Add 1 teaspoon Walden Farms blueberry spread, 1 teaspoon Walden Farms marshmallow dip, 1 teaspoon olive oil, and a bit of lemon juice… blend and bake at 350 for 13 minutes. I tripled the recipe and used a muffin top pan! 2 per serving + 1 teaspoon olive oil.
I heated up some strawberry rhubarb compote (a la Janeva!)
Sitting down to enjoy my breakfast and change how my day begins!
