I had a strong want to make a little cakie today, and I was really hoping to have a green tea cake. I tried two different recipes, which gave two very different tastes (and densities), but were both very delicious, and looked nearly identical.
Pictures below show both cakes. The picture showing two slices shows how the 2 packet cake is larger than the 1 packet cake, but both looked the same.The first one is more of a meal replacement cake since it’s more dense and uses 2 packets. You lose the lemon flavor of the IP Lemon Matcha Green Tea packet, but it still tastes great with a warm, unsweetened green tea. This one I call just a Matcha Green Tea-cake
MatchaGreen Tea-cake
1 cake = 2 Packets
- For cake:1 packet IP Pancake mix
- 1 packet Lemon Matcha Green Tea Drink mix (reserve 1/4tsp of drink mix for glaze)
- 1/4 tsp baking powder
- 1/3 C egg whites
- 1/2tsp olive oil
- For glaze:1 Tbsp WF Marshmallow Dip *
- 1/4 tsp IP Lemon Matcha Green Tea Drink
MixPreheat oven to 350 degrees, and use the olive oil to grease a mini cake or mini pie pan (parchment paper liners work too, if you’d like to save your oil for something else).
Mix all dry ingredients for the cake, then add the egg whites. Stir until fully mixed, then spoon batter into your pan.
Bake for 20 minutes or until a toothpick comes out clean when inserted. Allow to cool for 5 minutes before glazing.(While cake is cooking, prepare the glaze)
Mix WF Marshmallow dip with 1/4tsp IP Lemon Matcha Green Tea Drink mix, and use to glaze the cake when cooled.

The second cake uses 1 packet, and the same glaze recipe (because it was delicious, of course). It retains the lemony flavor of the IP Lemon Matcha Green Tea Drink mix, and is a lighter cake. For this cake, you MUST use egg whites fresh from the eggs, not egg white cartons (like egg beaters), otherwise they won’t fluff up.
Lemon Matcha Green Tea Cake
1 cake = 1 packet
- For cake:1 packet IP Lemon Matcha Green Tea Drink mix packet (reserve 1/4 tsp for glaze)
- 2 fresh egg whites
- 1/8 tsp cream of tartar
- 1/2 tsp olive oil
- For glaze:1 Tbsp WF Marshmallow Dip
- 1/4 tsp IP Lemon Matcha Green Tea Drink
MixPreheat oven to 350 degrees, and use the olive oil to grease a mini cake or mini pie pan (parchment paper liners work too, if you’d like to save your oil for something else).
Whip egg whites and cream of tartar until stiff peaks form. Then, gently fold in IP Lemon Matcha Green Tea Drink mix, adding a little at a time, until fully mixed in.

Allow to cool for 5 minutes before glazing.(While cake is cooking, prepare the glaze)
