Tomorrow is Halloween. We will all be faced with candy, costumes, treats, and temptation. If you are like me, you have too much candy (because it’s a Saturday, and I just KNOW there will be more kids than usual) and have to resist eating even on piece.
Halloween in my house is a BIG deal. We decorate the house, wear costumes, and greet the kids at the door. Typically there is booze, food, creepy music, and friends. Tomorrow is no exception.
I am baking for my friends, and I am baking for myself. I am making Chocolate Pumpkin Muffins, and , and I am going to make a YUMMY warm drink (Chocolate drink mix, pumpkin pie spice, cayenne pepper, and hot water blended!) That way I will have an opportunity to enjoy something “decadent” without the sting of cheating.
I have a game plan on how to have my chocolate without sacrificing my self-esteem. I have a cute costume (would not have been possible without IP.)

Chocolate Pumpkin Muffins:
Preheat oven to 350°
Begin by grating ½ cup of zucchini (about 1/3 to ½ of a medium zucchini)
(Note on zucchini: shred it, microwave it for 1 minute, then place the shreds between paper towels and blot out excess water. Let cool while preparing the remaining ingredients!)
1 package Ideal Protein milk or dark chocolate pudding mix (IP and depends on choice. I like Dark best)
1 package Chocolate chip pancake mix
½ cinnamon spice
1 tsp pumpkin pie spice
1 tsp baking powder
1 tsp Splenda
(Put the above in a bowl and whisk them for 30 seconds)
Once the dry is combined fold in the following:
1/3 cup liquid egg whites
1 Tablespoon Walden Farms Chocolate Syrup
2 tsp olive oil
2 Tablespoons water
Add the ½ cup shredded zucchini (it should be cool enough now)
Spray 6 normal size muffin tins with Cooking spray, and spoon equal amounts of batter into each tin. (Do not use paper cups… they stick and you will never get the muffin out)
Bake 12 minutes. You can do the mini muffins (12 of them) instead, but cooking time may not be as long.
