Faux Potato Salad


1 head cauliflower, cut into bite-size
pieces (or 14 oz. = 4 C. cauliflower)
4 hard-boiled eggs, chopped
1/2 cup Walden Farms mayonnaise, or more to taste
2 tablespoons dill pickle relish, sugar free (or celery)
2 tablespoons diced green onion
1 tablespoon prepared yellow mustard
salt and ground black pepper to taste

1. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 5 minutes.
2. Mix cauliflower, eggs, mayonnaise, dill pickle relish, green onion, mustard, salt, and pepper together in a bowl.
